I'm glad you brought up Facebook - great UI. I've spent a lot of time examining it, and I can assure you that it is absolutely 100% doable on XPages, with very little "hacking" required. Again: repeat controls, visibility, etc., all what it was made to do.
The biggest problem I see here is that there simply haven't been that many XPages apps made yet. It's been live for, what, just over 9 months? And deployed in customer environments even less? And most Lotus developers aren't designers, so they're going to grab the stock themes and just roll with it.
Give it more time and I think you'll be more impressed.
