If the profile field value is added to the XML sent to Flex then you can hide the column. No hoops. What's your Flex experience? Sounds like you're making assumptions?
Notice in the demo app that the XML defines the columns, which are added to the grid at "run time". Most of what you see on screen is governed by the XML. Disabling and/or hiding elements is child's play
