Mark, I assume you're already aware of this, but once you have both clients - 6 and 7 - running in parallel (using the respective nlnotes.exe file), hitting the appropriate bookmark icon should start the coresponding version of designer.
At least it always did it for me (with 4.6, 5, 6.5 and 7 installed on the same machine). I used an installation procedure similar to what Jerry described, though.
